Roasted Aloo Gobi (Potatoes and Cauliflower)

This traditional potato-and-cauliflower meal, common on Indian dining establishment menus, produces a fantastic make-ahead celebration meal. You can pre-roast the veggies, and after that whenever you’re prepared, toss them in the pan with your onions and spices to complete the meal in 15 minutes.
